It is a young vinegar, with a bright and lively flavor, suitable for daily use. Among its ingredients you will only find cooked must, acetified and aged in fine wooden barrels... but it is young, so you can still feel that "sparkling and slightly aggressive" note on the palate.

How to appreciate it better? Definitely as a rustic condiment in raw or cooked vegetable salads. You can also have fun creating emulsions with oil and salt or mustard.
